The coffee story
Doi Saket, located in Chiang Mai province, is Thailand’s oldest coffee growing region. In the late 1970s, the first Arabica trees from the Thai King’s opium replacement program were planted here. Unlike many other regions, these trees were never replaced with higher-yield cultivars, leaving heirloom varieties like Typica still prevalent. Typica is now rare, as many farmers have replaced it with higher-yield, rust-resistant varieties.
This lot is the result of a collaboration with Nui and Aoy, a young couple who left their white-collar jobs in the city nine years ago to return to their parents’ coffee farm. Nui, 40, is an engineer by training, while Aoy, 37, is an accountant. Together, they have embraced innovation to improve the quality of their coffee.
With this lot, we explore how controlled fermentation can add complexity and fruit-driven character while maintaining the sweetness and texture
associated with honey processing.
