Misael is a very traditional coffee grower in the region of Huehuetenango. He utilizes simple and common techniques both at the farm and in the post harvest processing. The quality of this coffee reflects the care and dedication Misael has to production.
He is very thankful for his land, where he can cultivate coffee, from which he can earn a living. He is particularly thrilled about the new specialty coffee movement, as he has seen economic benefits through his attention to detail both in the field and at the wet mill. Misael makes sure to maintain his farm with regular replanting of trees helping with the quality of the cherries.
He is also very aware of the soils depletion and makes sure he uses adequate fertilization and shade management, which in turn gives the soils natural compost material.
Thanks to dry, hot winds that blow from Mexico’s Tehuantepec plain, the Highland Huehuetenango region is protected from frost, which allows for cultivation at high altitudes, leaving this coffee with complex acidity and a full body.
This roast profile is a light espresso roast and can be used for all brewing including espresso.
