This is the Golden Blend, a mix of Geisha, Yellow Bourbon and Caturra.

Mallorca is operated by Santiago’s Londoño and owned by his uncle and father. For many years Mallorca has been a highly productive farm in the area of Caicedonia. In this area, the Londoño family owns several farms. After finishing his MBA, Santiago decided to return the Mallorca and start a sustainable farm project. In this time he reestablished shaded canopy.

The farm is mainly planted with Caturra. Four years ago the family decided to plant rare varieties such as Geisha and Yellow Bourbon. This new crop was established under the banana shade with the goal of having other sources of income. The banana shade has been used to monitor the exposure of the Geisha and Yellow Bourbon to the sun. At Mallorca, both crops are fertilized to their needs so there is no nutrient competition. The shade tree works to keep the moisture of the crop and slows the cherry’s ripening.

With the planting of rare varieties, the farm management had to adapt to new processing methods such as naturals and honeys as well as monitoring processing variables. Santiago’s administration has focused on detailing information of every batch to ensure traceability. Conditions and variables are noted and each individual lot is stored in a warehouse at 19 degree Celsius in grain pro bags.

When every lot is stored a sample is taken and sent to Café Y Procesos, a nearby quality assuring company that cups every lot and classifies its quality. With the help of Café Y Procesos Santiago, the team have created a blend of three varieties and mixed together from the farm, all naturally processed.
