The municipality of Acevedo is located to the south of the Huila department, bounded on the north by the Suaza River, on the south by San Jose de la Fragua, Caqueta and Piedmont, on the east by Belen de los Andaquies and on the west by Palestine.
The Pacamara variety is a hybrid of Pacas and Maragogype plants (see what they did there?). The goal of the cross-breeding was to combine the favourable aspects of each – Pacas is fairly hardy and disease-resistant with good yields, and Maragogipe is known for its large beans and cup quality. It was first bred by the Salvadoran Institute for Coffee Research in 1958, but wasn’t available to coffee producers until the late 1980’s, after 30 years of scientific research.
Pacamaras are known for their complexity and intense aromas; medium to dense bodies with creamy textures; and elegant acidity. Their flavour profile can range from sweet notes of chocolate and butterscotch to fruitier undertones reminiscent of citrus, red berries, and stone fruits. We had some robust discussions about which three notes to include on the card for this one – there’s a lot going on in the cup; it’s tough to choose!
