This coffee comes to us from our friends at Project Origin. The brainchild of 2015 World Barista Champion, Sasa Sestic, they work closely with producing partners around the world helping to raise quality. 

Don Fabio operates a number of farms in the Marcála region, and took out first place in 2018’s Honduras Cup of Excellence. 

Mogola was the first farm Don Fabio purchased back in 1970, the same year he married his wife. Lines of trees are used to separate different varieties and provide shelter from the wind and each lot is marked with different coloured flowers to help identify them to the pickers. The farm has both high humidity and relatively low temperatures, helping to maintain moisture levels in the soil. This means that when it does get hot, the plants don’t suffer too much stress. It also allows for slow maturation, contributing to the complexity and intensity of flavour in the cup.
